Spiced Apple/Pear & Oat Muffins

Check out these delicious muffins baked by one of our lovely customers using pears she picked in our orchard!Helen (@helenmrh on Instagram!) has very kindly supplied the recipe for anyone else that would like to give these a try! (Original recipe uses apples)



6tbsp sunflower oil plus extra for greasing

140g self raising flour

1tbsp baking powder

1tsp ground mixed spice

115g soft light brown sugar

175g porridge oats

250g eating apples or pears

2 eggs

125ml skimmed milk

125ml fresh apple juice



Preheat the oven to 200deg C

Grease a 12 hole muffin baking tin

Sift together the flour, baking powder and mixed spice into a bowl.

Stir together and add sugar and 140g oats

Finely chop the unpeeled apples or pears, discarding the cores. Add to the flour mixture and stir together.

Place the eggs in a large jug or bowl and beat lightly, then beat in the milk, apple juice and oil.

Make a well in the centre of the dry ingredients and pour in the beaten ingredients.

Stir gently until just combined; do not over mix.

Spoon the mixture into the muffin tin and sprinkle the muffins with the remaining oats.

Bake in the preheated oven for 20mins or until well risen, golden brown and firm to touch. Leave to cool in the tin for 5 mins and serve warm or transfer to wire rack to cool completely!
